Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente.
Drain and set aside.
Step 2: Prepare the Jerk Chicken
Rub the chicken breasts with jerk seasoning, lime juice, and olive oil. Let it marinate for at least 15 minutes (or overnight for more flavor).
Heat a large skillet over medium-high heat and add a bit of oil.
Cook the chicken for 4-5 minutes per side until fully cooked and slightly charred.
Remove from heat, let it rest for a few minutes, then slice into thin strips.
Step 3: Make the Creamy Jerk Sauce
In the same skillet, melt butter over medium heat.
Sauté onions until soft, then add minced garlic and cook for 30 seconds.
Pour in heavy cream and chicken broth, stirring constantly.
Add Parmesan cheese, salt, black pepper, and red pepper flakes. Stir until smooth.
Step 4: Combine Everything
Add the cooked pasta to the sauce and toss to coat evenly.
Stir in cherry tomatoes and sliced jerk chicken.
Garnish with green onions and extra Parmesan if desired.
Step 5: Serve & Enjoy!
Plate the pasta while warm.
Serve with garlic bread, a fresh salad, or coconut rice for a complete meal.
