Ingredients
  

  • For the Jerk Chicken:
  • 2 boneless skinless chicken breasts
  • 2 tbsp jerk seasoning store-bought or homemade
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • For the Pasta & Sauce:
  • 12 oz penne pasta
  • 2 tbsp butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes optional, for extra heat
  • 1/2 cup cherry tomatoes halved
  • 2 green onions sliced (for garnish)

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente.
  • Drain and set aside.
  • Step 2: Prepare the Jerk Chicken
  • Rub the chicken breasts with jerk seasoning, lime juice, and olive oil. Let it marinate for at least 15 minutes (or overnight for more flavor).
  • Heat a large skillet over medium-high heat and add a bit of oil.
  • Cook the chicken for 4-5 minutes per side until fully cooked and slightly charred.
  • Remove from heat, let it rest for a few minutes, then slice into thin strips.
  • Step 3: Make the Creamy Jerk Sauce
  • In the same skillet, melt butter over medium heat.
  • Sauté onions until soft, then add minced garlic and cook for 30 seconds.
  • Pour in heavy cream and chicken broth, stirring constantly.
  • Add Parmesan cheese, salt, black pepper, and red pepper flakes. Stir until smooth.
  • Step 4: Combine Everything
  • Add the cooked pasta to the sauce and toss to coat evenly.
  • Stir in cherry tomatoes and sliced jerk chicken.
  • Garnish with green onions and extra Parmesan if desired.
  • Step 5: Serve & Enjoy!
  • Plate the pasta while warm.
  • Serve with garlic bread, a fresh salad, or coconut rice for a complete meal.

Notes

  • For Extra Heat: Add more jerk seasoning or Scotch bonnet peppers.
  • Make it Lighter: Swap heavy cream for half-and-half.
