Ingredients
  

  • 2 large ripe bananas mashed
  • 2 cups all-purpose flour sifted
  • 3/4 cup granulated sugar or coconut sugar
  • 1/2 cup shredded coconut unsweetened
  • 1/2 cup melted butter or coconut oil
  • 2 large eggs room temperature
  • 1 tsp vanilla extract enhances flavor
  • 1 tsp baking soda helps it rise
  • 1/2 tsp salt balances sweetness
  • 1/2 cup milk dairy or non-dairy

Instructions
 

  • Preheat & Prepare:
  • Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • Mash Bananas:
  • In a large bowl, mash the ripe bananas until smooth.
  • Mix Wet Ingredients:
  • Add melted butter, sugar, eggs, vanilla extract, and milk. Whisk until fully combined.
  • Combine Dry Ingredients:
  • In a separate bowl, whisk together flour, shredded coconut, baking soda, and salt.
  • Fold & Pour:
  • Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Bake:
  • Pour the batter into the prepared loaf pan and bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool & Serve:
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
