- 2 large chicken breasts – poached or roasted then cubed
- ¾ cup mayonnaise – use full-fat for best flavor
- ¼ cup Major Grey’s chutney – or another sweet mango chutney
- 1½ teaspoons curry powder – mild or medium depending on taste
- 1 tablespoon fresh lemon juice
- ½ cup golden raisins or halved red grapes
- ½ cup diced celery
- ¼ cup chopped green onions or scallions
- Salt to taste

Cook the Chicken:
